As a registered dietitian and someone with celiac disease, I have always been extremely dissatisfied with the gluten-free cakes and cookies sold in supermarkets. The taste was always bitter, the texture dry and gritty, and the ingredient list full of artificial flavorings. The final straw was when my friends were enjoying a box of Madeleines, remarking on how rich yet light the Madeleines were, and I was not able to experience the same joy as them. Finally sick of having to eat subpar cookies, I began experimenting in the kitchen, starting with the Madeleine: trying different alternative flours, wet and dry ratios, flavor profiles, baking times and temperatures, and batter consistencies. Several months and hundreds of batches later, I had the perfect gluten-free Madeleine. Indulgently rich, yet soft and pillowy in texture, and made with all-natural ingredients. From then, I began developing different flavors and product lines, including Sablé (butter cookies), Langue de Chat (crispy cookies) and Petit Financier. In 2021, I began selling them at farmer’s markets with hopes of sharing the enjoyment that great tasting food can bring. A La Pêche quickly became a local sensation – and demand has been growing ever since!
